AppleSauce Muffins
Easiest muffin recipe I have ever made - okay, it's the only one I've ever made outside of a package and it's super easy and super yummy!
Note -- I had made my own applesauce over the oven a few days ago so I already had cinnamon in that. It also had apple chunks in it still which made the muffins that much better!
Here's what you'll need.
2 cups
flour
1/2- 3/4 cup
sugar --- I used 1/2 because I had sugar in my applesauce
2 teaspoons
baking powder
1 teaspoon cinnamon --- I omitted this part since it was in my applesauce.
1/4 teaspoon salt -- I just shook some in.
1 large egg, beaten
1 - 1 1/2 cup unsweetened applesauce --- I used the applesauce I made.
1/2 cup butter, melted

Optional - Crystallized sugar --- I didn't use this as I didn't have any.
Directions
Put all the dry ingredients into a medium bowl then add the applesauce, beaten egg and melted butter. Mix it all up by hand (no mixer needed) and there you have your mix!
1. Heat your oven to 375 degrees.
2. Spray muffin tins with nonstick spray.

3. Evenly scoop mixture into muffin pans.
4. Sprinkle crystal sugar sprinkles on tops of muffins.
5. Bake for 18 to 20 minutes if making regular muffins.

6. Bake for about 10-12 minutes if making mini muffins.
7. Test to see if toothpick comes out clean.
