Instant Brown Sugar Oatmeal Cookies

This morning was a real pregnacy craving, a craving for oatmeal cookies. Not chocolate chip or raisin oatmeal, just brown sugar. So I rummaged through my cabinets to find that I only had my big thing of instant oatmeal and sure enough there was a recipe for Chocolate chip cookies - exactly what I didn't want. 

You know what this meant? It meant I had to come up with my own concoction and do a little of this and a little of that. They turned out pretty well! They aren't too sweet and the brown sugar isn't over powering - plus they are eggless and healthy! Or at least semi healthy. Let's just say I don't feel bad eating them :)

Here's what I used.

2 cups Instant Oatmeal (100% whole grain)
3/4 cup brown sugar (you can add more or less)
4 Tbs Water
4 tbs milk (I used 2% but you can use whatever you have)
1/2 cup Vegetable Shortening
3/4 cup All Purpose Flour
1 tsp Baking Soda
1 tsp Vanilla
1/2 tsp Salt

Now do this....

Preheat your oven to 375 degrees Fahrenheit 

Throw it all in the bowl together and mix it up. Oh be sure when you put the brown sugar in that it isn't in clumps because that can make it more difficult for mixing.

Next get out your cookie sheet and place some wax paper over it. Place the cookie mix on your pan in sizes of your choice. I did mine about 2 inches big and got 20 cookies.  



These were already baked - just cooling


Bake for 12 minutes or until golden brown. Let cool for a few minutes and then enjoy!
