Penne Pork Pasta with Zucchini
We were given some different types of pork about a week ago and in the lot was ground pork, something I have never cooked with. Honestly, we aren't BIG pork eaters, unless it's bacon so until this past month I had never made many pork dishes. I decided to find a more healthy pasta recipe that I could use this ground pork in, below is what I came up with. We served ours with a spinach and lettuce salad mix.

Ingredients
2 cups uncooked penne pasta
1 pound ground pork
Peppers --- I used one small red, yellow and orange
1 can (14-1/2 ounces) stewed tomatoes, undrained
1 can (8 ounces) tomato sauce
Sea Salt
Pepper
1 medium zucchini, thinly sliced.
Directions
Cook pasta as instructed
Cook pork and peppers until pork is no longer pink. Drain your meat.
Add your tomatoes and tomato sauce. Salt and pepper to taste. Bring all of this to a boil and then reduce heat and cook covered for about 5 minutes.
Drain your pasta
Add pasta and zucchini slices to pan. Cook all in covered pan for 3-5 minutes.
