Easy Banana Muffins
Ingredients
3 or 4 well-ripe bananas
1 1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon fresh ground nutmeg
3/4 cup brown sugar (if you don't have brown sugar, substitute 1/2 cup white sugar)
1 egg
1/3 cup butter, melted and cooled
1 teaspoon vanilla
You can also add walnuts, chocolate chips or blueberries to your liking. I would do 1/2 - 3/4 cups.
Directions
Preheat oven to 350 degrees fahrenheight
Grease Muffin Pan or Use Cups to line
Melt Butter
In large bowl mix together flour, salt, baking powder and baking soda, cinnamon and nutmeg.
In another bowl mash your bananas. Then add your butter, vanilla, egg, and sugar. Mix all together.
Add your dry ingredients to your wet ingredients, making sure to mix well. If using chocolate chips or walnuts you can add these now as well.
Fill your muffin tins about 2/3 full (If you are using blueberries now is the time to drop them in the mix) and cook for 20-30 minutes or until a nice golden brown. Be sure to turn your pan halfway through baking.
