Gluten Free Waffles and Simple Maple Syrup

For dinner tonight we had gluten free waffles, homemade maple syrup, eggs and breakfast sausage. The kids and I like all of it but the hubby wasn't to keen on the waffles. If I have to go gluten free so does he, it will take some getting used to! I thought these waffles, while they have a different taste, were very good and I am proud of myself for making them completely from scratch!


These don't look that great. I didn't pour enough batter to fill the holes.

 Gluten Free Waffles
  • 1 cup 1/2 GF All Purpose Baking Flour (I used Bob's Red Mill)
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  •  1 Tb Sugar
  • 1 Tb Oil
  • 3/4 cup Milk
  • 4 Eggs, separated
  • 1 tsp Vanilla

Directions 

Mix the flour, baking powder, soda, salt, and sugar together.


In a separate bowl, whip the egg whites and vanilla until it form stiff peaks or resemble whipping cream.

Add the milk, egg yolks, and oil to the dry ingredients and blend together. With a rubber spatula, slowly fold in egg whites with the rest of the ingredients. The entire mix should be light and fluffy. Spray waffle iron and begin making waffles.





Maple Syrup

1 Cup Water
1 Cup White Sugar
1 Cup Brown Sugar
1 TBSP Maple Extract (Can be found by vanilla and other flavors)

Directions
Bring the water, white sugar, and brown sugar to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and stir in the maple extract; simmer 3 minutes longer.

You can store remaining syrup into any container with a lid. I used a canning jar I had used at Christmas for candies.
