Deep Fried Chicken - Fast and Easy
Ingrediants:
1 package thin sliced chicken breasts
3 cups flour
Salt
Pepper
2 Tbs Texas Pete Sauce (You can use more I just poured mine in)
2-3 Large Eggs
Directions:
Heat your deep fryer to 375 degrees Fahrenheit. If you don't already have oil in your fryer now would be a good time to put it in. I personally use Crisco Vegetable shortening in mine.
In one bowl break open both eggs and whisk with Texas Pete.
In second bowl mix together your flour, salt and pepper. Place as much salt and pepper in as you feel necessary. I probably did about 2-3 tbs of pepper and 1-2 tbs of salt.
Now you need to grab your chicken and cover both sides with your egg mix. You can do this by dunking it or spreading it over the chicken.
Next layer on the flour mix - this will be your breading. I personally do one side at a time to make sure the chicken has enough flour on it. You can always throw it together in a bag and shake it all up I suppose.
Place your chicken into the deep fryer. I did 2-4 pieces - placing in one piece of chicken at a time. Let cook for 4-6 minutes or until a golden brown color of your liking.
Take out and let cool on a plate while you cook the rest of your chicken. When finished you can enjoy with a nice side of mashed potatoes and gravy with corn on the cob :)
My husband enjoyed this so much that he asked for it to be a weekly or at least bi weekly meal!
