Pankcake Muffins
These are so much better than pouring batter over a skillet and having to stand there until each pancake is done! Don't get me wrong though, I love my pancakes and plan to continue making them the usual way in the future but when you have a lot going on in the morning nothing is easier than mixing up a pancake batter and putting it in muffin tins to cook.
Ingredients;
2 cups Bisquick
2 eggs
1 cup milk
Fillers -- Blueberries, strawberries, bacon, anything you want in your pancake muffin or you don't have to use anything at all!
Directions:
Preheat your oven to 350 degrees Fahrenheit
Mix together your Bisquick, eggs and milk as directed on the box.
Get out your muffin pan and grease that baby up with Pam or whatever you have on hand. I use canola spray.
Fill the cups 1/2 - 3/4 of the way full with your mix. I did mine 1/2 because I didn't want them to be really big.
Place your fillers on top.
Bake in the oven for 12 minutes.
Yields 12-16 muffins
We personally drizzled some Sohgave syrup on them and served with scrambled eggs and bacon for the hubbies birthday today :) These would be great to make while you are getting ready in the morning though to take with you on your way to work or when traveling.
