Cheesesteak Stuffed Pepper - Paleo
I know a few of the recipes I've called paleo call for cheese and there is some great debate about whether paleoers should eat dairy. We as a family have chosen to eat dairy. We have a two year old and a 4 month old, we won't give it up. Plus we like cheese. ;)
Ingredients
2 Peppers (cut in half in either direction)
8 oz Thin sliced roast beef
Provolone or Mozz Cheese (I used Mozzarella)
Mushrooms (optional)
Onions (optional)
2tbs butter
Salt and Pepper to taste
Directions
Preheat oven to 400 degrees
Cut your peppers in half - either direction is fine.
Melt your butter and cook mushrooms, onions and beef on skillet for just a few minutes.
Put Cheese inside pepper -- just sort of line the pepper.
Stuff pepper with meat mix
Add more cheese to top
Bake in oven for about 15 -20 minutes.
