Zucchini Lasagna - Paleo

This is another yummy paleo dish that we had for lunch. I only did one "real layer" of lasagna since it was just for lunch.

Ingredients
1 large Zucchini (will make at least 2-3 layers)
1 lb hamburger (or meat of your liking)
1 can fire roasted tomatoes
Mozzarella Cheese to your liking (we really like cheese)

Optional - Spinach leaves and mushrooms. I didn't have either this time but they will be added next time for sure!

Directions
Preheat oven to 350 Degrees Fahrenheit
Cook your hamburger (or other meat) and drain.
Slice your zucchini into strips and then layer the bottom of your pan. I used a potato peeler so they were thin.
Pour your hamburger over layer of zucchini 
Layer on tomatoes (and other optional items if you have any)
Add a top layer of zucchini then top with your cheese. 
Bake for 30 minutes

Easy peasy right?! You can always do more layers but be sure to adjust your ingredient list when you purchase them.
