Potato Cakes

The other day I was looking around at different meals and I saw someone had made sweet potato cakes and they looked pretty much amazing. Of course I forgot to buy sweet potatoes so I made some out of regular potatoes. I also didn't have cold mashed potatoes on hand from a previous meal so I had to make fresh ones.

Ingredients
2 cups of mashed potatoes (cold or made fresh. I made fresh)
1 egg
1/4-1/2 cup flour
Oil (I used canola)

***Optional items***
Seasoning
Onions, peppers...things you would like to throw in your cakes.

*** If making mashed potatoes***
4 potatoes
1/2 stick butter (more or less if you want)
Milk to your liking

Directions --- Looks like a lot of steps but it's really not!!!
1. If you don't have cold mashed potatoes on hand (I sure didn't) go ahead and make yourself some, if you do move on to step 2. I used four medium sized potatoes. When those are done cooking throw in your milk and butter. Mash away.

2. Mix in your egg with your potatoes.

3. Mix in your flour. I started with 1/4 cup and added about 1/4 cup more to make it to the thickness I wanted. Should be almost like a dough consistency. Just play around until you get what you want.

4. Add your seasoning and other items if wanted.

5. Put about 2tbs of oil into your frying pan and let heat over medium.

6. Scoop out big tablespoons of mixture into hot oil. Flatten to about 1/4 inch thick. 

7. Fry until browned and then flip and continue to brown patty on other side. As you are frying you may need to add more oil. If this happens add at your discretion. 

8. Remove from the pan and place on a paper towel until they are all done. 
    Will make about 10 potato cakes. 

They are pretty yummy in my opinion. The hubby of course had never had them so it took him a minute to adjust but in the end he said, "I'm glad we tried something new". Is that a good thing or a bad thing? I am going to say good...
