Creamy Chicken Stew
This is really good. The hubby couldn't wait until dinner to eat it and started at 3pm so by the time I got a photo of it there was only enough left for two bowls! We will be making this again for sure :)
Ingredients
1 whole chicken OR 3-4 shredded chicken breasts (we had made a whole chicken the night before and used that since not much was had)
3 cups water
3 chicken bouillon cubes (you could replace water and cubes with 3 cups chicken broth)
1 cup half and half
1/4 cup flour (this is to thicken so you can omit if you want or add more)
1/2 cup frozen peas
1 carrot chopped
1 celery stalk chopped
3 white mushrooms chopped
3 small peppers or 1 bell pepper of your choice (I used a small red, yellow and orange)
Sea Salt and Pepper to taste
Directions
If your chicken isn't cooked and shredded you will want to do that first in whatever method that works for you. You can also season your chicken if you like.
Put in your water, bouillon cubes (or broth), half and half and flour into your pot on medium heat. Stir this all together until flour is dissolved.
Throw in the peas, carrots, celery, mushrooms and pepper. If you chicken is done throw that in as well and then salt and pepper to your liking.
Let the stew come to a simmer over medium heat and then cover and cook on low for another 30 minutes while still maintaining it's simmer.
This will make 6-8 servings.
